Get a taste of the tropics with this spicy and sweet chicken dinner and the unusual combination of mango and cucumber.
1/2 small red onion, thinly sliced
2 tbsp. fresh lime juice, plus lime wedges for serving
1 ripe (but firm) mango, thinly sliced
1 small seedless cucumber, thinly sliced into half-moons
1 tbsp. olive oil
1 tbsp. salt-free jerk seasoning
8 thin-cut chicken breasts (about 11/2 lbs total)
1/4 c.coriander, chopped
- Heat grill or grill pan over medium. In a large bowl, toss onion, lime juice, and pinch each salt and pepper, then toss with mango and cucumber. Let sit, tossing occasionally, at least 10 minutes.
- Meanwhile, in a small bowl, combine oil, jerk seasoning, and 1/4 teaspoon salt, then rub all over chicken. Grill until just cooked through, 2 to 4 minutes per side. Fold coriander into cucumber salad and serve with chicken and lime wedges if desired.
