Fried Prawn & Crispy Potatoes by Chef Yu

Ingredients

Tiger prawn headless ( 3 pieces ) , 150gram, cleaned

Salt to taste

Mayonnaise 100 gram

Lemon juice 10ml

Sugar 5 gram

Potato 2 large, very fine shredded

Oil 2 L. for frying

Method

Fry shredded potato in medium hot oil till it becomes golden yellow and crispy, take out immediately from oil and set it in a drainer. Marinate prawn with salt and half of lemon juice, and fry it in the same oil till it well cooked and take out set in a plate. Mix mayonnaise and left lemon juice and salt together. Mix fried prawn and tasted mayonnaise. Coat mayonnaise prawn with crispy potato set on plate and serve.
